Eddy Tseng is a Taiwanese national living in Cape Town, South Africa. Eddy is a qualified chef and sushi master and after training in Taiwan he moved to South Africa to continue his training as a sushi chef in some of the top listed restaurants in Johannesburg and Cape Town. Eddy opened his own restaurant in 2008 and had great success with his second restaurant Sake House Bar and Sushi Lounge. Eddy sold his restaurant in 2016.
Eddy is a brilliantly talented chef and a great teacher and has experience cooking in almost all Asian cuisines.

I make noodles occasionally but struggle with the thickness, to thin or too thick. Do you have suggestions, I use my KitchenAid pasta attachment
You mentioned chow mein noodles, would these be the same or similar. The dried chow mein noodles at the grocery stores are sometimes difficult to find and expensive to buy

I'm Japanese. I think it would be better to use a UCHIWA fan to cool it down quickly. This is because the rice absorbs too much water and becomes watery.
Wait can I use a rice cooker instead of a pot?

I have 1 but nothing about what you just taught...I have a 6 inch mini to go with my mini wok....was to small. so I got a 7 or 8 inch...my cousin gave me a big 1...not sure of size...they said soak it over might...never said to oil it ...I gotta redo em now...could you show the care of a wok I got 3 or 4...a hammered 1..another 1 with small handle I and a cast iron 1...please...tryin to figure how to steam rice noodles
